Ingredients:
- 1 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons vegetable oil
- 1 tablespoon granulated sugar
- 1 teaspoon vanilla extract
Instructions:
1. In a large bowl, whisk together flour, baking powder, and salt.
2. In a separate bowl, whisk together milk, egg, vegetable oil, sugar, and vanilla extract.
3. Add the wet ingredients to the dry ingredients and mix until smooth.
4. Heat a non-stick pan or griddle over medium heat.
5. Pour about 1/4 cup of batter onto the pan and tilt to evenly coat.
6. Cook for 1-2 minutes, until bubbles appear on the surface and the edges start to dry.
7. Flip and cook for another 30 seconds to 1 minute, until golden brown.
8. Serve warm with your favorite toppings, such as powdered sugar, jam, or fruit.
